Meet the Team

  • owner/director of operations

    Chef David Schroeder considers himself a hometown guy. Though born in New Jersey, he grew up in North Palm Beach. Following culinary school, Schroeder landed in California at the Playboy Mansion and Thomas Keller’s renowned Bouchon Bistro in Yountville, California. Schroeder returned to South Florida and immersed himself in the upscale hospitality at Ritz-Carlton South Beach, Fairmont Turnberry Isle, The Westin, The National Hotel and W South Beach while pursuing a business degree in Hospitality Management at Johnson & Wales. Schroeder returned to his to his childhood roots and bought a small neighborhood Italian restaurant, Costello’s in Downtown Abacoa. After three years of success, Schroeder created a new concept, Das Biergarten, a German themed craft beer bar. As chef, he created the German inspired gastropub cuisine. The entrepreneurial spirit beckoned again and Schroeder opened Brick & Barrel in December 2017 in the Lake Park Arts District. In June of 2020, Schroeder moved the restaurant to Downtown Abacoa in the heart of Jupiter where a much larger space could accommodate the popularity the restaurant had achieved since opening. The whiskey-centric eatery features locally sourced comfort food, an extensive bourbon selection of over 250 bourbons and ryes, craft cocktails and live music. In his free time, Schroeder enjoys spending time with his wife and two boys, golfing and not working.

  • Executive Chef

    Nick Dellinger, an experienced and talented chef, joined our team in the spring of 2023. With a diverse culinary background and a passion for creating innovative dishes, Nick brings a wealth of knowledge and expertise to our kitchen.

    Chef Nick's culinary journey has taken him to various destinations, including Las Vegas, Portland, Napa and the Caribbean. These experiences have allowed him to immerse himself in different culinary cultures and refine his skills along the way. Prior to joining our team, Nick served as the executive chef at Lucky Shuck in Jupiter for two successful years. During his tenure, he left a lasting impression on both locals and visitors with his creative menu and attention to detail. With his extensive experience, Nick is eager to showcase his culinary talents at Brick and Barrel. His dedication to delivering exceptional dishes and his passion for pushing boundaries in the culinary world make him a valuable addition to our team. When he's not in the kitchen, Nick enjoys spending quality time with his wife and their son, Duke.

    Louie Balducci is an exceptional professional who joined our team as the general manager in 2021. With an impressive number of years of experience under his belt, Louie brings valuable skills and expertise to our organization. Originally hailing from New York, Louie has immersed himself in various managerial roles throughout his career, demonstrating his ability to lead and excel in fast-paced environments. When not devoting his time to work, Louie enjoys the tranquility of residing in Jupiter, where he currently lives with his girlfriend and two beloved dogs. His passion for outdoor activities and exploration helps him maintain a balanced lifestyle, allowing him to bring fresh ideas and perspectives to the workplace. He also likes to brag that he’s 2023 B&B Summer Golf League Champion*

  • Director of Beverage

    Peabo Powell is a highly accomplished and dedicated professional who currently serves as the Director of Beverage at Brick & Barrel. Joining our team in 2019, Peabo brings with him an immense passion for the world of bourbon and mixology and he consistently strives to create unique and unforgettable drinking experiences for our customers. As a certified bourbon steward, Peabo has a deep understanding of the intricacies and nuances of bourbon, allowing him to curate an exceptional collection of spirits that cater to a wide range of palates.His creativity knows no bounds, as he constantly experiments with new ingredients and techniques, always striving to push the boundaries of what is possible. In his free time, Peabo enjoys performing in local theater productions, traveling and disc golf.
